The air fryer has become the appliance in our house. It’s fast, easy, and the kids can make a delicious meal like these Chicken Quesadillas in the Air Fryer.

What do you need to make Chicken Quesadillas in the Air Fryer?

You need just 3 ingredients to make this delicious meal.

  • flour tortillas
  • shredded cheese
  • pre-cooked chicken fajita meat like John Soules Chicken Fajita meat or Tyson frozen grilled chicken breast strips.

What’s the secret to a cheesy delicious quesadilla?

There’s a trick to making a really good quesadilla. It’s mixing up the cheese and the meat before putting it in the tortilla.

I mix up the shredded cheese with the chicken in a bowl and then put it in the tortilla.

There’s another secret to a good quesadilla, and it’s the cheese. You want to use Mexican cheeses if you can like Oaxaca or Chihuahua cheese. You can even find shredded “quesadilla cheese” at Walmart that it’s really good. I use it often.

If you can’t find any of those, a mixture of mozzarella and monterey jack cheeses are good, too.

How do you make chicken quesadillas in the air fryer?

I found that in an air fryer, it’s better to make an entire quesadilla with one tortilla folded over versus tortilla on bottom, cheese and meat, and tortilla on top. This is because the “air” part of the air fryer will blow the top tortilla off the quesadilla, which is annoying.

When I make quesadillas, I make two at a time in the air fryer, for adults. Then, I cut them in half for four quesadilla pieces. For kids, I usually just make one quesadilla and cut it into halves.

If the chicken is frozen, I defrost it for about 30-45 seconds in the microwave and then mix it up with shredded cheese in a bowl. If it’s just refrigerated, I just use it as is.

The chicken needs to be pre-cooked before making the quesadillas. I like to keep the John Soules of precooked fajita meat on hand just for this purpose. It makes this a quick meal.

Next, I add the cheese and meat mixture to the tortilla and fold it over. (It might open back up, but you’ll be able to fix that while it’s cooking.)

Spray the tray of the air fryer with oil spray. Then, lay the quesadillas down. Spray the outside of the top part of the tortilla.

Cook the quesadillas at 400 F degrees for about 6 minutes. At the halfway point, push the top of the tortilla down over the cheese and meat mixture and then flip over the entire quesadilla to cook.

When the time is done, your cheese should be completely melted and your tortilla should be a little crispy on the outside.

Slice the quesadilla in half. Serve it with guacamole, sour cream, and salsa.
