Have you ever made Air Fryer Cheese Enchiladas? It takes no time at all, like it will probably take you 10 minutes from making them to eating them. It’s that fast, and you can make enough to feed the whole family!

They only take THREE ingredients and are so simple to make. I can make a whole pan of them while I’m still browning ground beef for tacos when I make Mexican food for dinner.

Ingredients for Cheese Enchiladas in the Air Fryer

  • 8 oz cheese, shredded
  • 10 corn tortillas
  • 10 oz can enchilada sauce
  • 8 x 8 pan
  • foil

How do you make Cheese Enchiladas in the Air Fryer?

Steam the tortillas for 30 seconds. I do this by dampening with water, wringing out the excess, and wrapping the stack of tortillas in the paper towels and microwaving them for 30 seconds.

Line the 8 x 8 pan with 2-3 layers of foil all the way up to the sides, so you can pull the foil out with the enchiladas in it and place it in the air fryer.

Spray the foil with non-stick oil spray.

Sauce in the bottom of the foil pan for enchiladas.

Add a tablespoon of sauce to the foil and spread it on the bottom.

Shred the cheese. I really recommend getting a bar of cheese and shredding it. It tastes better and melts so much better than the pre-shredded. But, pre-shredded is also fine.

Begin adding cheese a tortilla, roll it, and place it in the dish.

Do this until you’ve filled the foil.

Pour the rest of the sauce over the top of all the enchiladas.

Add shredded cheese to the top of the enchiladas.

Carefully pull the foil out of the casserole dish and put it in the air fryer basket.

Cook at 400 F for 4 minutes.

Let sit for 1-2 minutes in the air fryer then remove the foil carefully. It may be hot! And put it back into the 8 x 8 pan.

Serve enchiladas immediately.

Don’t have an air fryer?

No problem! You can make this same cheese enchilada recipe in the oven, toaster oven, and even the microwave. The microwave oe will probably take about the same amount of time. But…the oven or toaster oven will require additional baking time.
